Casey's Baked Beans

1/2 lb. cooked ground beef
8 slices cooked chopped bacon
1 C cooked chopped onions
2-16 oz. cans Bushes Baked Beans
1-16 oz. can kidney beans, drained
1-16 oz. can butter beans, drained
1/4 C brown sugar
1/4 C ketchup
1/4 C BBQ sauce
2 Tbsp molasses
2 Tbsp mustard
1/2 tsp salt
1/2 tsp chili powder

Mix all ingredients, bake uncovered for 1 hour at 350. Let set 1/2 hour before serving.
Serves 10


PANCAKES

Here's the PANCAKE recipe from the Drama Team's Pancake Breakfast!

2 cups flour            1 tsp. salt     2 eggs                 2 cups milk
4 tsp. baking powder    4 tbsp. sugar   4 tbsp. butter(melted)

Blend all dry ingredients in a large mixing bowl. Melt butter in microwave.
In another bowl, beat eggs just until yolks are blended. Add milk and melted butter
and blend just until mixed. Add wet ingredients to dry ingredients and blend together
just until lumps disappear. Fry on hot griddle. Use oil if needed to keep from sticking.

Here is the recipe that you've all been asking for! Keep in mind, I rarely follow specific directions to a tee. You have to use your own judgment on measurements that are to your liking.

boneless, skinless breasts sliced horizontally to make about 3 pieces from each breast half.
flour for dredging
4 eggs beatened

parmesan cheese (lots)
a good olive oil for frying

For the Sauce:
1/4 C butter
1/4 C chicken broth
1/2 C white wine (you can use cooking wine)
1/2 C lemon juice
3 T garlic powder
chicken base or boullion cubes to taste
cornstarch

Dredge chicken in flour to coat lightly. Mix eggs and cheese. Dip chicken in egg mixture and fry in hot oil until golden brown on both sides adding more oil as necessary. Be sure to let the added oil get hot before adding more chicken. Remove chicken from pan and drain on paper towels. Melt butter in a clean skillet. Add wine, lemon, garlic and chicken base. Put about 1/4 C of sauce in a small bowl and mix it with a small amount of cornstarch, return to sauce mixture and repeat if necessary. The object is to get the sauce the consistancy of a very thin gravy. Layer chicken on a cookie sheet lined with foil, pour sauce over chicken reserving some for the table. Bake at 350 for 1/2 hour.
